Bibim guksu is a popular Korean noodle dish enjoyed in the summer. When temperatures are high and humidity drags everyone down, bibim guksu comes to the rescue.

It’s simple.

It’s refreshing.

And best of all, there’s no cooking involved.

Bibim Guksu

 

Traditionally, somyeon noodles, thin wheat flour noodles, are tossed in a spicy and tangy sauce and topped with cucumber slices. But… if you have been on my blog before, you definitely know how much I like to transform a classic dish by putting my own spin on it! Well, this dish is no different!

Using my (amazing) spiralizer, I made cucumber noodles to replace the somyeon noodles. A lot of people may be familiar with “zoodles” (zucchini noodles) or “coddles” (carrot noodles) but cucumbers really make this dish extra refreshing and light! I also added a few carrot slices to give the dish a nice crunch as well as a handful of arugula and avocado slices. Arugula adds a peppery kick that compliments the spicy and tangy sauce while avocado balances the spice while adding healthy fats.

With everything combined, this healthy bibim guksu has a satisfying crisp and crunch compared to the traditional silky somyeon noodles. The lightness of this dish will prevent you from feel sluggish throughout the summer days!

CUCUMBER BIBIM GUKSU (KOREAN SPICY “NOODLES”)

2 servings

Sauce

  • 2 tbsp gochujang
  • 2 tbsp rice wine vinegar
  • ¼ (2 tbsp) apple or Korean pear, grated or pureed 
  • 1 tbsp maple syrup
  • 2 tsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp sesame seeds

Combine the sauce together and set aside.

Dish

  • 2 long 6-8’’ cucumber
  • Handful of arugula
  • ½ avocado, sliced into cubes
  • 2 tbsp pine nuts
  • ¼ Korean pear, sliced (optional)

Process cucumber into a spiralizer to make cucumber noodles. Place desired amount of arugula into two separate bowls. Add the cucumber noodles and avocado slices. Liberally drizzle the sauce and top with pine nuts and pear.
