This oil-free homemade granola is filled with Mediterranean-flavored goodness. Instead of using olive oil or coconut oil, I use tahini which adds healthy fat and nutrients without losing that crunchy texture.

The tahini adds a bolder nutty flavor, which is enhanced by the addition of toasted sesame seeds. The pinch of cardamom adds a hint of surprise in every bite while pairing perfectly with almonds and pistachios. Decent amount of maple syrup and raisins are added for sweetness without overpowering the delicious savoriness of the granola! Homemade Granola

quick notes

  • For granola recipes, I would typically encourage people to substitute or add other nuts or seeds but the pistachios, almonds and sesame seeds are key in achieving the bold, nutty mediterranean flavor.
  • In order to get an even golden bake, make sure to rotate the pan at the half way mark.

MEDITERRANEAN-FLAVORED HOMEMADE GRANOLA

makes 2 cups

Dry ingredients

  • 2 cups of rolled oats
  • ¼ cup of pistachios
  • ¼ cup almonds
  • ¼ cup sesame seeds
  • ¼ tsp ground cardamom
  • 5 cracks of salt

Preheat oven to 350 degrees. Mix together the dry ingredients first.

Wet ingredients

  • ¼ cup of maple syrup
  • ¼ cup tahini

Then add the wet ingredients and mix until fully incorporated. Transfer the granola unto a parchment-lined pan and baked in the oven.

Dried fruit

  • ¼ cup raisin

After 15 mins, rotate the pan and add in raisins. Bake for another 10-15 minutes until golden brown!
