This tahini chickpea salad sandwich is a faux version of this amazing chicken salad sandwich I had many years ago. Before I went vegan, I used to eat this chicken salad sandwich on walnut raisin bread everyday for weeks. Do not judge as I am a creature of habit!

Chickpea Tahini Sandwich

The chicken salad was nothing amazing but I fell in love with the crunchy and slightly sweet walnut raisin bread. It wasn’t until my husband and I took a trip to Woodstock, NY where I found an amazing loaf of walnut raisin bread at a local bakery! Bread Alone is the name of the Woodstock bakery and they have since expanded and currently sell their breads at Whole Foods.

The bread brought back memories of the chicken salad sandwich so much that I wanted recreate it – but veganized and better! Vegan mayo would be obvious choice to use. But I thought the earthy, nutty taste of tahini would complement the toasty sweetness of the walnut raisin bread.

Chickpea Tahini Sandwich

Tahini and chickpeas come together for a savory faux chicken salad with bits of raisins and apples to bring hint of sweetness all in one bite!


quick notes

  • If using dry chickpeas, make sure to soak them for at least 12 hours. Then, transfer to a pot with enough water to cover them by 3 inches and bring to a boil. Simmer chickpeas for 35-45 minutes until they are soft.
  • If using canned chickpeas, removing the skins is optional but will yield a smoother tahini chickpea filling.
  • Alternatively, you can serve the tahini chickpea filling on crisp bread!

TAHINI CHICKPEA SALAD SANDWICH

makes 2 servings

Tahini Chickpea filling

  • 1 15.5-ounce chickpea can, rinsed and drained
  • ¼ cup tahini
  • ½ red onion
  • ½ apple
  • ¼ cup of dill
  • 2 tablespoons of raisins or more
  • Juice from ½ lemon
  • Pinch of paprika

Other

  • 4 slices walnut raisin bread or any bread, toasted
  • slices of cherry tomatoes
  • bunch of Alfalfa sprouts

Transfer rinsed and drained chickpeas into a bowl and mash with a fork. Add in tahini and mix. Then add the rest of the ingredients and mix!

Liberally spread tahini chickpea salad on toast. Assemble sandwich by adding cheery tomatoes and alfalfa sprouts!
